Running a daycare can be exhausting at times. I try to energize with daily salads. Here is a simple and easy recipe I make often. I found it in the BHG magazine about 2 Thanksgivings ago.
This is what it calls for (Sara Foster):
1. In a large bowl, combine the orange zest and juice, lime zest and juice, and vinegar. Slowly whisk in the olive oil, then season with salt and pepper to taste.
2. In the same bowl, layer beets, carrots, apple, and turnip. Season with additional salt and pepper to taste. Toss salad right before serving, then top with parsley leaves.
*To cut matchsticks, use a mandolin or a food processor that has either a julienne blade or large shredding blade.

I start with the turnip.
Then add the carrots
Next is the Granny Smith apple with Beets on top
Orange and lime juice together
Toss it a little
I add the juice to everything but, you can add when ready to serve
It is so yummy! I told my sisters about it and the love it!
It is a perfectly delicious salad for anyone who loves beets. It is sweet with all the flavors – and you will not taste the turnip. Try it and let me know.
